A Labor of Love
Brûlée was born from a simple conviction: that exceptional coffee is less about speed and more about intention. We collaborate directly with family-run farms at altitude — places where the terroir is as important as the varietal.
Our kitchen mirrors this philosophy. Every dish on the menu is composed around what is genuinely seasonal, genuinely local, and genuinely delicious — not what is merely fashionable.
We roast in-house, in micro-batches of 3–5 kg, on a vintage Probat drum roaster calibrated for even heat distribution and careful development time ratios.
This lot from the Gedeo forest zone carries an unmistakable clarity — wildflower aromatics, a lemon verbena brightness, and a peach-sweet finish that lingers without bitterness.
The Ethiopia pour-over is unlike anything I've had in the city. The notes of jasmine are real — not marketing copy. Genuinely extraordinary coffee.
Brûlée is my weekly ritual. The space is quiet, the light is beautiful, and the Cardamom Kouign-Amann is something I dream about on weekdays.
We hosted our agency's off-site here. The private event team was exceptional — the cupping session alone was worth the entire day. Highly recommend.
We welcome walk-ins throughout the day. For weekend brunch or groups of 6 or more, a reservation is strongly recommended.
